Ahhh, fall! The colors, the brisk air, the beautiful blue skies…and can you believe it – 80 degree weather?! As a sun worshipper and warm weather aficionado, I’ll take it for as long as we can get it!
Fall is the time we start craving comfort foods…and the pumpkin patch is the perfect place to go to expand your culinary repertoire and get in some good vitamins and antioxidants. And, the orchards! Also, a great place to spend an afternoon!
For the past two weeks, I’ve been tempted and salivating over the photos of fall inspired foods in the most recent issue of Taste of Home magazine. OMG! (I want to try them all!)
Pumpkin is a fabulous fruit high in carotenoids (hence it’s orange color). Pumpkin is high fiber, low calorie, and a perfect fall staple for main courses, side dishes, and dessert! So versatile! And, don’t forget about the seeds! They are a super source of protein (have a handful as a snack, or sprinkle some on your cereal in the morning).

Dinner – Low Fat Pumpkin and Sage Pasta – Yes Please!
